Choc Peanut Butter+Coconut Protein Bites

1 cup peanut butter
¼ cup honey or agave
1 Tablespoon coconut flour
2-3 heaped tablespoons protein powder (I use a vegan vanilla protein from Tropeaka)
4 Tablespoons cocoa powder or cacao powder
Sprinkle of mini choc chips (I use cacao nibs or vegan choc chips)
Roll in unsweetened coconut flakes (if desired)
If you’re not using a drippy peanut butter, lightly soften PB in microwave (do not melt!!). Combine ingredients in a bowl, adding choc chips as the last item. I use a small food scoop to portion out the batter before rolling into balls. Roll into balls and then roll in a plate of coconut flakes if desired. Recommended to refrigerate, can keep fresh in the fridge for about a week.
